Mustard Crust Roast Beef recipe

This succulent roast beef recipe will make a real change from your usual roast beef dishes - but it's incredibly easy. The addition of some sweet, caramelised onion on the side of your plate is also sure to be a sweet treat that will have everyone fighting over the dinner table for the last bit. Serve with a rich gravy and some roasted vegetables.


  • 1.5kg rib of beef
  • 4 tbsp. English mustard powder
  • Salt and black pepper
  • 1 tbsp. brown sugar
  • 2 or 3 onions

Method of Preparation:

  1. Slice the onions into rings.

  2. Heat the oven to 220C.

  3. Put a roasting tin on the heat. Pat the beef all over with salt and pepper.

  4. Once the tin is hot, brown the beef on all sides, so that it is sealed.

  5. Remove the beef from the tin and set aside for five minutes to cool slightly. Once cooled, pat the mustard all over the beef.

  6. Arrange the onions in the bottom of the roasting tin and sprinkle with sugar. Place the beef on top and cook for one hour and ten minutes. Allow the beef to rest under foil for half an hour before serving.

For rare roast beef, cook the beef at the same temperature but for 45 to 50 minutes instead. If you don't like English mustard, use a jar of grainy mustard instead of the powder. This recipe serves eight people.
