Irish Spiced Cured Beef recipe

This super simple cured beef recipe is perfect for Christmastime - or any time of the year, for that matter. It's dead easy to make too - plus, it lasts for ages.


  • 3kg beef roasting joint
  • 4 bay leaves
  • 12 cloves
  • 6 mace blades
  • 2 garlic cloves, minced
  • 75g brown sugar
  • 450g table salt
  • 3 carrots
  • 3 onions
  • Bunch fresh herbs

Method of Preparation:

  1. Mix the bay leaves, cloves, mace, garlic, sugar and salt in a deep tin, then place the beef in tin and roll around in the mixture so it is well covered.

  2. Cover the beef really well in foil, then cling wrap, then leave for 7 days. Every day, turn the beef, rubbing well with the cure, and wrap it back up really well.

  3. When you come to cook the beef, halve the carrots and onions and place into a saucepan with the herbs and enough water to cover the beef. Boil for 2 hours, then weigh down with a plate whilst the beef cools so that it stays nice and compact. Leave to cool before serving.

You can play around with the herbs and spices that you add - it's entirely up to you. This recipe serves 10-12.
