Garlicky Beef Fillet recipe

When you have a great cut of beef, you needn't fuss with too many additional flavours. This recipe simply calls for garlic and salt and creates a wonderfully flavourful and tender fillet of beef, perfect for serving with rosemary potatoes and some sweet roasted parsnips.


  • 1.5kg beef fillet
  • Head of garlic
  • 4 tbsp. salt

Method of Preparation:

  1. Separate all of the cloves of garlic from the head. Peel them and then put them into a pestle and mortar or food processor with the salt.

  2. Bash together until a paste forms and then rub the paste all over the meat.

  3. Heat the oven to 230C. Place the meat in a roasting tin and cook for 45 minutes, until the outside is crisp and brown and the inside is juicy and tender. Leave to rest for a little while before serving.

This beef is exceptionally tasty cold on sandwiches with a little bit of spiky horseradish cream - so make sure you save some! This recipe serves eight people.
