Beef Recipe

Traditional Cottage Pie recipe

There is nothing more comforting than a fantastic cottage pie and the bonus is, you can prepare it a day or two in advance when you have a little time. Beef is simmered until tender with tomato puree and vegetables before being topped with creamy mashed potatoes and being baked in a hot oven.

500g beef mince
400g tin chopped tomatoes
1 onion
2 carrots
1 garlic clove
300ml beef stock
2 tbsp. tomato puree
1 tbsp. olive oil
1 tbsp. dried mixed herbs
1 tbsp. Worcestershire sauce
Salt and pepper
1kg peeled and diced potatoes
75g butter
2 tsp. mustard
4 tbsp. milk

Method of Preparation:

  1. Finely chop the carrots and onion. Mince the garlic clove.

  2. Heat the oil and add the carrot, onion and garlic. Cook until soft and then add the mince and cook until browned. Stir in the tomato puree and cook for one more minute.

  3. Add the tinned tomatoes, Worcestershire sauce, herbs, beef stock and salt and pepper. Bring to a simmer and cook for one hour.

  4. Meanwhile, cook the potatoes in boiling water until fork tender. Drain them and then mash with the butter, mustard and milk until very smooth.

  5. Preheat the oven to 190C. Spoon the mince mixture into a large casserole dish and top with the mashed potato.

  6. Bake for half an hour until golden on top.

You can easily fill out this pie with anything you fancy - baked beans or lentils work well in place of beef if you want to make it veggie, for example. Top with strong cheese to make it even tastier. This recipe serves four people.
