Beef & Veal Balkans Pastries recipe

This pastry recipe is basically the Balkans version of a British Cornish pasty. These pastries are full of flavour and are a great portable snack, or you could serve them with sour cream, salsa and kefir to make them into more of a meal.

Ingredients:

  • 500g plain flour
  • 25g melted butter
  • Warm water
  • 1 tsp. salt
  • 400g minced veal
  • 250g minced beef
  • 4 whole onions
  • 25g butter
  • 2 egg yolks
  • 1 tbsp. tomato puree
  • 1/2 400g tin tomatoes
  • Pinch each ground coriander, chilli powder, garlic powder and oregano

Method of Preparation:

  1. Make the pastry. Stir the flour and salt together then make a well in the centre. Pour in the melted butter and start bringing the flour into the butter. Add warm water, just so that the pastry comes together, then keep mixing until you get a dough ball. Divide the dough ball into four. Set each ball to one side, covered well with cling wrap.

  2. To make the filling, finely chop the onions. Melt the butter in a large frying pan and fry the onions together until soft and sweet. Remove from the pan and set to one side, then cook the beef and veal together until browned. Add the tomato puree, coriander, chilli, garlic and oregano and cook for 1 minute, then add the tomatoes and the cooked onions and cook for 20 minutes until very thick. Leave to cool, then stir in the egg yolks.

  3. Roll the pastry balls out on a floured worktop, until about 3/4 of a cm thick. Leave the sheets to dry out for a couple of minutes, then spoon 1/4 of the filling onto one half of each sheet.

  4. Brush the edges of the pastry with melted butter or olive oil and roll into a long roll, then seal the ends of the roll. Roll the roll up into a spiral and repeat with all 4 sheets of pastry. Bake in a 180C oven for about 30 minutes until golden.

For a little extra shine on your pastries, brush them with egg yolks before baking. Recipe serves 4.
